Abstract: Instructions for applying and obtaining approval of a label with a Child Nutrition (CN) label statement are provided for seafood product manufacturers in this manual by the Food and Nutrition Service of the U.S. Department of Agriculture. Directions are also included for calculating the contribution that seafood products make toward meal pattern requirements for Child Nutrition Programs. CN label application materials-specifications form, product label, alternate food products information - are individually examined. Procedures involved in reviewing CN labels are discussed, including the queuing system, identification numbering system, and label application return and resubmittal. Minimum quantities of meat/meat alternate and bread/bread alternate that must be present in order for a product to state credit on the CN label are identified. Equations are presented for determining the total ounces of equivalent meat/meat alternate and the number of servings of bread/bread alternate in a serving of seafood product. A table presents yield information for selected seafood products. The recommended format for application for approval of seafood product specifications and labels with CN label statements is outlined and sample label submittals are shown for a combination seafood patty, fish and cheese portion, and breaded shrimp nuggets made with vegetable protein.
